A traditional beef stew slow-cooked with wine, vegetables, and herbs.

Why try it?

Daube exemplifies the warm, comforting dishes central to Niçois cuisine. It reflects the robust flavors and slow-cooked traditions that the region is known for, using fresh, local ingredients and Provençal herbs.

How it tastes

The stew boasts rich, deep flavors with tender chunks of beef soaked in a full-bodied wine sauce, scented with herbs. The vegetables add sweetness and depth, creating a savory, warming dish.

Origin & History — first documented: 1350

Emerging in the 14th century, Daube originated as a way to preserve meat and was a practical dish for farmers making use of available produce. It grew in popularity in Nice due to its hearty, comforting nature.
