Calissons have their origins in the region of Aix-en-Provence during the 15th century, traditionally served during religious events and festive occasions. They were said to have been inspired by medieval marzipans and have since become an iconic sweet treat in and around Marseille.

Recipe

Ingredients

  • 🥜 200 g almonds
  • 🍯 150 g candied melon
  • 🍋 50 g orange peel
  • 🍯 100 g icing sugar
  • 🥚 1 egg white
  • 🌾 as needed wafer paper

Method

  1. 1 Soak almonds overnight, then drain and peel.
  2. 2 Grind almonds with candied melon and orange peel to a smooth paste.
  3. 3 Roll paste onto wafer paper, topping with icing sugar mixed with egg white.
  4. 4 Cut into lozenge shapes and bake until set.
