Pressed sushi made with mackerel and vinegared rice, a specialty of Kyoto.

Why try it?

Saba Sushi combines Kyoto's love for preserving techniques with the delight of fresh seafood, symbolizing the region's resourcefulness and culinary creativity.

How it tastes

The oily, rich flavor of the mackerel is balanced by the tangy vinegared rice, creating a savory and slightly sweet taste, typically subtly enhanced by ginger.

Origin & History — first documented: 1650

Saba Sushi was developed in the Edo period (1603-1868) when pickling and preserving fish were essential due to Kyoto's distance from the sea. It became iconic for its practicality and distinctive taste.

  • 🌾 300 g sushi rice
  • 🥣 60 ml rice vinegar
  • 🍯 20 g sugar
