Why try it?

Cabrito links Córdoba's city tables to the ranches and dry hills of the Sierras, where goat raising has long been part of rural life. Eating it at a communal asado reveals the province's culture of fire, patience and generous hospitality.

How it tastes

The meat is tender but lean, with a clean, slightly gamey flavor and a smoky crust. It is traditionally served hot from the cross-shaped grill with lemon, salad or salsa criolla.

Origin & History — first documented: 1700

Goat cookery arrived with Spanish settlers and adapted to the arid mountain landscapes of Córdoba during the colonial period. Rural families in the Traslasierra and northern sierras refined slow roasting over native hardwood embers. During the 20th century, roadside parrillas and festival asados made cabrito a recognizable Córdoba specialty beyond the countryside.

Recipe

Ingredients

  • 🥩 1.2 kg young goat
  • 🧂 18 g coarse salt
  • 🧄 20 g garlic
  • 🌿 15 g parsley
  • 🫒 45 ml olive oil
  • 🍋 1 lemon
  • 🧂 2 g black pepper
  • 🍋 20 ml red wine vinegar

Method

  1. 1 Rub the goat with salt, garlic, pepper and olive oil.
  2. 2 Secure it open on an asador or roasting frame.
  3. 3 Roast beside hardwood embers for 2 to 3 hours, turning and basting occasionally.
  4. 4 Rest briefly, cut into portions and serve with lemon or salsa criolla.
