Why try it?

The Córdoba alfajor reflects the province's old convent, bakery and mountain-town sweet traditions. Its fruit filling, especially quince or citrus marmalade, tastes distinct from the chocolate-heavy alfajores associated with other Argentine regions.

How it tastes

The biscuit is delicate, crumbly and gently buttery, with a bright, concentrated fruit center. A thin sugar glaze adds a clean sweetness without hiding the aroma of quince, fig or citrus.

Origin & History — first documented: 1850

Alfajores reached Argentina through Iberian and colonial confectionery traditions, then developed regional forms during the 19th century. Córdoba's version became associated with convent-style sweets and the bakeries of the sierras, where fruit preserves were readily available. During the 20th century, commercial producers helped make the Córdoba style a recognizable regional gift and snack.

Recipe

Ingredients

  • 🌾 180 g wheat flour
  • 🥛 90 g butter
  • 🍯 75 g sugar
  • 🥚 2 egg yolks
  • 🌾 60 g cornstarch
  • 🍯 140 g quince paste
  • 🍋 2 g lemon zest
  • 🍯 100 g powdered sugar
  • 🍋 15 ml lemon juice

Method

  1. 1 Cream butter and sugar, then mix in yolks, lemon zest, flour and cornstarch.
  2. 2 Chill the dough, roll it out and cut small rounds.
  3. 3 Bake at 175°C until pale golden, then cool completely.
  4. 4 Sandwich the cookies with quince paste and brush or drizzle with lemon icing.
