Why try it?

The lomito is Córdoba's beloved late-night answer to the hamburger, found at neighborhood lomiterías and roadside stands. Its generous layering reflects the province's hearty, convivial approach to casual food.

How it tastes

The steak is savory and juicy, while melted cheese, ham and egg add richness. Tomato, lettuce and mayonnaise bring freshness inside a crisp, lightly toasted roll.

Origin & History — first documented: 1970

The sandwich emerged in Córdoba's urban food scene during the late 20th century, especially from the 1970s onward. Local lomiterías developed it as a more substantial alternative to the traditional steak sandwich. By the 1990s, the Córdoba-style combination of beef, ham, cheese, vegetables and egg had become a defining regional fast food.

Ingredients

  • 🥩 300 g beef tenderloin or loin steaks
  • 🌾 2 sandwich rolls
  • 🥩 80 g cooked ham
  • 🥛 80 g provolone or mozzarella
  • 🥚 2 eggs
  • 🥕 120 g tomato
  • 🥕 60 g lettuce
  • 🥣 40 g mayonnaise
  • 🫒 15 ml olive oil

Method

  1. 1 Season and grill the beef steaks until browned outside and just cooked through.
  2. 2 Toast the rolls and melt the cheese over the hot steaks.
  3. 3 Fry the eggs and assemble each roll with ham, tomato, lettuce and mayonnaise.
  4. 4 Serve immediately while the bread and cheese are warm.
