Carbonada developed in colonial-era South America from European meat stews adapted to local ingredients. In northwestern Argentina, including Salta, cooks incorporated native corn and squash alongside potatoes and dried fruit. The dish became established in household cooking during the nineteenth century and was often prepared in a heavy pot over a wood fire.

  • 🥕 220 g potato
  • 🥕 250 g butternut squash
  • 🌾 150 g fresh corn
  • 🧄 120 g onion
  • 🥕 180 g tomato
  • 🍯 50 g dried apricots
  • 🥣 500 ml beef stock
  • 🧂 3 g paprika
  • 🫒 25 ml oil

Method

  1. 1 Brown beef cubes in oil, then add onion and cook until softened.
  2. 2 Add tomato, paprika, and stock; cover and simmer until the beef is nearly tender.
  3. 3 Add potato, squash, corn, and dried apricots and cook until everything is soft.
