A spiral-shaped pastry from Majorca

Why try it?

Ensaimadas are a quintessentially Majorcan pastry, symbolizing local tradition and skilled craftsmanship passed down through generations, often shared during celebrations and holidays.

How it tastes

Flaky, soft, and subtly sweet, this pastry has a slight tang from the lard which creates several layers of crisp yet tender dough. When filled, the sweetness of pumpkin or angel hair melds beautifully with the buttery notes.

Origin & History — first documented: 1700

With its origins tracing back to the 17th century, Ensaimada became popular among local bakers as a festive treat. Its name derives from 'saïm,' the pork lard used in its dough, reflecting the island's agricultural resources and history.

Recipe

Ingredients

  • 🌾 300 g flour
  • 🍯 100 g sugar
  • 🥚 2 eggs
  • 🥛 100 g pork lard
  • 🥕 150 ml water
  • 🥛 10 g yeast
  • 🧂 1 tsp salt

Method

  1. 1 Mix flour, sugar, salt, and yeast with water to form a dough.
  2. 2 Knead the dough until smooth and elastic, then let it rise.
  3. 3 Roll thin, spread lard, and shape into spirals.
  4. 4 Bake at 190°C until golden brown, then cool.
