Traditional breadcrumbs mixed with pork products and vegetables

Why try it?

Migas symbolizes the resourcefulness and rustic charm of Andalusian cuisine, originally crafted by shepherds. This hearty dish reflects a deep connection to the land and traditions of using what's available.

How it tastes

A savory blend of crispy breadcrumbs mingles with the rich flavors of cured meats and peppers. The texture contrasts of crunchy, fatty, and moist ingredients create an immensely satisfying dish.

Origin & History — first documented: 1800

Migas has its roots in shepherd communities, where stale bread was a staple. By the 19th century, it evolved with the addition of meats and became a classic comfort food across southern Spain.

Recipe

Ingredients

  • 🌾 200 g stale bread
  • 🥩 100 g chorizo
  • 🫒 100 ml olive oil
  • 🥩 100 g pancetta
  • 🧄 2 garlic cloves
  • 🥕 1 green peppers
  • 🧂 1 tsp salt

Method

  1. 1 Soak bread in water, then squeeze and crumble.
  2. 2 Fry chorizo and pancetta until crispy and remove.
  3. 3 Sauté garlic and peppers in the same oil.
  4. 4 Add bread crumbs, mix well, and finish with meats.
