Risotto cooked with squid ink, providing a distinct black color and rich flavor

Why try it?

This risotto celebrates Venice's connection to the Adriatic Sea, using squid ink to craft a truly unique dish that embodies the city's maritime essence and culinary sophistication.

How it tastes

The dish has a distinctive briny, rich flavor from the squid ink, complemented by the creamy, tender rice and slightly chewy squid. The aroma is deeply savory with a slight hint of the sea.

Origin & History — first documented: 1400

The origin of using squid ink in Venetian cuisine can be traced back to the 14th century, highlighting both Venice's major maritime trade and its penchant for unique ingredients derived from the sea.

Recipe

Ingredients

  • 🌾 200 g carnaroli rice
  • 🦐 300 g squid
  • 🦐 20 g squid ink
  • 🥣 500 ml fish stock
  • 🧄 100 g onion
  • 🍷 100 ml white wine
  • 🫒 50 ml olive oil

Method

  1. 1 Sauté finely chopped onion in olive oil until soft.
  2. 2 Add rice, cook until translucent, then deglaze with white wine.
