Emerging during the 10th century as a game meat dish in the royal kitchens, Laal Maas was traditionally prepared during hunting expeditions. The use of fiery Mathania chilies was meant to mask the gamey flavor, making it a regal favorite.

Ingredients

  • 🥩 500 g mutton
  • 🥛 150 g yogurt
  • 🧂 50 g red chilies
  • 🧄 5 cloves garlic
  • 🧄 1 inch ginger
  • 🧂 2 tsp coriander seeds
  • 🧂 1 tsp turmeric powder
  • 🫒 100 ml mustard oil
  • 🧂 to taste salt

Method

  1. 1 Marinate mutton in yogurt, garlic, ginger, and spices.
  2. 2 Heat mustard oil and fry the marinated mutton.
  3. 3 Add water and simmer until meat is tender.
