How it tastes

Ghevar has a crunchy, porous texture drenched in cardamom-infused sugar syrup that melts into a sweet, floral essence. Often garnished with nuts, it’s rich and aromatic, delivering notes of saffron and almond.

Origin & History — first documented: 1850

Invented around the mid-19th century during the reign of the royal courts in Jaipur, Ghevar was crafted as a festive offering. Its unique texture and ability to be stored long-term made it a favorite during harvest and monsoon celebrations.

Recipe

Ingredients

  • 🌾 200 g all-purpose flour
  • 🥛 150 g ghee
  • 🍯 200 g sugar
  • 🥛 100 ml milk
  • 🧂 1/2 tsp cardamom powder
  • 🧂 pinch saffron
  • 🥜 50 g almonds
  • 🥜 50 g pistachios

Method

  1. 1 Make a batter with flour, milk, and ghee; fry in ghee in circular motions to form disc shapes.
  2. 2 Prepare sugar syrup flavored with cardamom and saffron.
  3. 3 Soak fried discs in sugar syrup.
  4. 4 Garnish with sliced almonds and pistachios before serving.
