  • 🥩 300 g sweetbreads
  • 🥕 200 g mushrooms
  • 🥛 50 g butter
  • 🧄 2 cloves garlic
  • 🌿 1 tsp thyme
  • 🧂 1 tsp salt
  • 🧂 1/2 tsp pepper

Method

  1. 1 Soak sweetbreads in cold water for 1 hour, then blanch in boiling water for 5 minutes.
  2. 2 Sauté sweetbreads in butter until golden brown. Remove and set aside.
  3. 3 In the same pan, add more butter and sauté garlic until fragrant, then mushrooms and thyme.
  4. 4 Return sweetbreads to the pan, season with salt and pepper, and cook for another 5 minutes.
