Origin & History — first documented: 1929

The Pyynikki observation tower café began serving its signature doughnuts in the twentieth century as the park became a major leisure destination. The recipe developed from Finnish cardamom-bread and doughnut traditions rather than from a single ancient dish. By the late twentieth century, the café's munkki had become a widely recognized Tampere food landmark.

Ingredients

  • 🌾 300 g wheat flour
  • 🥛 150 ml milk
  • 🥛 50 g butter
  • 🥚 1 egg
  • 🍯 45 g sugar
  • 🌿 15 g fresh yeast
  • 🧂 3 g cardamom
  • 🧂 3 g salt
  • 🫒 700 ml rapeseed oil
  • 🍯 30 g coarse sugar

Method

  1. 1 Warm the milk and dissolve the yeast in it.
  2. 2 Mix in flour, sugar, cardamom, salt, egg, and softened butter; knead until elastic.
  3. 3 Let the dough rise, shape it into rings, and proof again.
  4. 4 Deep-fry the doughnuts until golden on both sides.
  5. 5 Roll them in coarse sugar and serve warm.
