Ingredients

  • 🥩 1 kg pork head
  • 🌾 50 g gelatine
  • 🧄 100 g onions
  • 🌿 2 bay leaves
  • 🍋 50 ml white vinegar
  • 🧂 10 g peppercorns

Method

  1. 1 Boil pork head with onions, bay leaves, and peppercorns.
  2. 2 Once meat is tender, remove and chop finely.
  3. 3 Reduce broth, add gelatine, and vinegar.
  4. 4 Combine chopped pork with broth in a mold; cool until set.
